Turkey Quesadilla with Homemade Flour Tortillas

I love hearing the hum of my Cuisinart food processor as it effortlessly combines the five simple ingredients into a ball of tortilla dough.  It’s been awhile since I made homemade flour tortillas and I thought tonight was a perfect night for something with a Mexican twist.  Rather than turning to my usual taco dinner, I opted for a different familiar favorite.

These quesadillas take on a unique flavor beyond anything similar you have ever tasted.  Since homemade tortillas tend to be thicker than most store-bought varieties, the final product has the sensation of eating a fancy flatbread sandwich.  The lime juice gives the turkey filling a fresh burst of flavor, while the cheese makes every bite a gooey one.

Turkey Quesadillas with Homemade Flour Tortillas
1 Tbl. olive oil
1 Tbl. jalapeno pepper, minced
3 Tbl. onion, minced
1 cup roasted turkey or chicken, diced
2 Tbl. fresh lime juice
1 cup cheddar cheese, shredded
8 Homemade Flour Tortillas

Heat the olive oil in a nonstick fry pan over medium heat.  Sauté the onions and jalapeno peppers for 1 – 2 minutes or until the onions are slightly translucent.  Add the diced turkey and lime juice to the mixture and sauté for an additional 2 minutes.  Set aside.

In a separate flat nonstick pan, coat the entire surface with cooking spray, and bring the pan to medium high heat.  Place a single tortilla in the coated pan.  Spoon two tablespoons of the turkey filling and a small amount of cheese on top of the tortilla.  Top with a second tortilla and lightly coat with cooking spray.

Carefully flip the entire quesadilla after approximately 1 – 2 minutes.  Cook the quesadilla for an additional 1 – 2 minutes, or until the cheese has melted and the exterior is slightly crispy.  Repeat with the remaining tortillas.  Serve with fresh salsa and your choice of toppings.
