Orange BBQ Shredded Chicken Sandwich

This post is going to be short, sweet and savory. I love really good barbeque. There’s a strange feeling of satisfaction when I lick the tangy sauce from my fingers just after taking an enormous bite. The challenge with great barbeque is it takes time…lots of time to get it just right.
Well, with a new city to discover, a new puppy to chase and a new house to unpack. I don’t have that kind of time right now. This recipe is a simple way to enjoy all the tastes of barbeque in a few short minutes.
Orange BBQ Shredded Chicken Sandwich
2 cups shredded chicken, roasted
3 Tbl. orange marmalade
¼ cup barbeque sauce
2 tsp. lime juice, fresh
salt and pepperAdd all the ingredients to a medium-sized sauce pan over medium high heat. Stew the mixture for 4-5 minutes or until the meat is completely heated through. Try to avoid bringing the sauce to a boil. Burned barbeque sauce is not a pretty sight or smell. Serve on crusty bread like ciabatta. Makes about 4 hearty sandwiches.
Authors Note: This recipe is designed to use chicken that has already been previous roasted. When I have a free moment, I typically throw a few chicken breasts in the slow cooker. I then shred and freeze the meat in advance for soups and stews.

Love these flavors! Having some slow-cooked chicken on hand is such a great idea, too, particularly for those weeknight meals that you want to put together quickly. Your puppy is really cute, by the way!
