Jumbo Chicken Meatballs

Jumbo Chicken Meatballs

I opened the refrigerator door to be greeted by a fresh package of ground chicken that was originally intended for homemade pot stickers.   However, after a long day of super important meetings, the last thing my caveman fingers wanted to do was pleat hundreds of delicate rice paper wrappers.  I wanted an easy meal that could be tossed in the oven and eaten within 30 minutes.

This recipe was actually a direct result of throwing anything that sounded remotely interesting into a food processor and letting it whirl.  Then, to make things even easier, I used an ice cream scoop to form the mixture into jumbo meatballs.  I knew after the first bite this one was a keeper!

Jumbo Chicken Meatballs
½ lb. ground chicken
½ cup fresh bread crumbs (2 slices of wheat bread)
¼ cup minced onion, (1 small onion)
½ cup shredded carrot (1 large peeled carrot)
¼ cup minced celery (2 stalks of celery)
4 oz. shredded Monterey Jack cheese
1 egg
½ tsp. Worcestershire sauce
¼ tsp. garlic powder
½ tsp. Dijon mustard
pinch of salt and pepper
¼ cup ketchup

Preheat the oven to 400 degrees.  Lightly spray a small sheet pan or four individual baking dishes with cooking spray.  Roughly tear apart the bread and pulse in a food processor until crumbly.  Pour the bread crumbs into a medium mixing bowl with the chicken.  Next, pulse the onion, carrots and celery in the food processor until finely minced.  Add the vegetable mixture and the remaining ingredients (except the ketchup) to the mixing bowl.  Lightly toss with a fork until well combined.

Portion out eight meatballs with a large ice cream scoop, and place 1″ apart on a baking sheet.  Coat the tops of each meatball with the ketchup.  Bake the meatballs at 400 degrees for 20 – 25, or until cooked through.

  3. These sound absolutely wonderful! While I’ll probably never give up beef or lamb or veal in my regular meatballs, this is a great alternative! I’ll try these out this weekend!

  7. I agree..sometimes the last thing I want to do when I come home is cook a complicated meal. All that chopping and prepping…yikes! I love meals that just seem to come together. This dish looks simple, awesome and delicious- my kind of meal!!
