Stuffed Green Bell Peppers

Stuffed Bell Peppers

After a rainy week here in Pittsburgh, the warm sunshine was a welcomed treat this weekend.  I took advantage of the weather by spending most of the daylight hours prepping my lawn for what will become a canvas of herbs and flowers.  A perfect backdrop for what will hopefully be many meals on the back patio.  To dull my achy muscles, Brent and I went out with a few friends for some much needed bubbly liquid over ice.  All this activity left little room for cooking beyond a basic sandwich or two.

The sun is beginning to set this glorious evening as I begin to mentally prepare myself for the week that lies ahead.  I was also trying to figure out what I would write for my ritual Sunday post.  Then I realized I completely forgot about these stuffed green bell peppers.  They were a weekday dinner a few weeks ago that was quick, easy, and the feta gave the ground beef a ton of flavor.

Stuffed Green Bell Peppers
4 large (or 6 medium) green bell pepper halves
1 lb ground beef
¼ cup onion, small minced
½ tsp. salt
½ tsp. pepper
1 tsp. garlic, minced
¼ tsp. chili powder
¾ cup brown minute rice
1 cup water
2 tsp. fresh basil, minced
1 Tbl. Worcestershire sauce
4 oz feta cheese, crumbled
1 cup fresh tomatoes, small diced

Preheat the oven to 375 degrees.  Remove all seeds and veins from the center from the bell pepper halves.  Turn cut side down on a microwave safe plate.  Steam the peppers in the microwave for 1 – 2 minutes.  Turn the peppers right side up and set aside.

Sauté the ground beef, onion, salt, pepper, garlic and chili powder in a large frying pan until completely cooked through.  This should take about 6 – 8 minutes over medium high heat.  Drain the excess grease from the pan.  Add the brown rice, water, Worcestershire sauce to the meat mixture.  Cook for an additional 6 – 8 minutes until the rice has completely absorbed the liquid.

Remove the pan from the heat, stir in the feta cheese and fresh tomatoes.  Evenly spoon the mixture into each bell pepper.  Bake the peppers at 375 degrees for 10-12 minutes, or until the green peppers have softened and the cheese has melted.  Serves 4 – 6 halves.

Authors Note:  I know it seems like there are a lot of ingredients, but they are all common items that can be found in your kitchen.

    Hey Cory- I live in Los Angeles, but grew up in Pittsburgh. Have relatives visiting from the Burg and decided to make Stuffed Bell Peppers.     I love stuffed peppers using red bell peppers……I stuff them with beef and rice, sausage, or couscous w/ olives, raisins and herbs.
    They always look pretty and taste terrific!

  9. I make stuffed bell peppers all the time! I alway use different color peppers, makes the plate look happy!! Same basic recipe, sometimes I use couscous instead of rice! Looks Great, thanks for sharing!
