I was killing time at the mall when I found myself in the cookbook section of a bookstore. Brent has recently decided to go on a low calorie diet, which means I’m on one as well. Oh the pressure. I was desperately searching for inspiration as I thumbed through the wide assortment of magic potion books that claimed to add flavor to my diet. There was no way I’m going to live off of rabbit food and healthy frozen meals just to lose weight. I need some substance to my flavor.
I have a few rules about buying cookbooks. They must have pictures, unpretentious recipes, and cute stories that inspire me to cook. The Diabetes & Heart Healthy Meals for Two broke all the rules. But I decided to give it a try and the first recipe was wonderful! The citrus flavor with the crisp slaw was bold and refreshing. The heavy mayo wasn’t missed at all. I feel skinny already.
Citrus and Ginger Broccoli Slaw
Adapted for a crowd from: Diabetes & Heart Healthy Meals for Two
½ cup orange juice
1 Tbl. orange zest
¼ cup lemon juice
3 tsp. sugar
1 1/2 tsp. fresh ginger, grated
12 oz. pack fresh broccoli slaw mix
½ red onion, thinly sliced
Whisk together in a large mixing bowl the orange juice, orange zest, lemon juice, sugar and ginger. Toss in the broccoli slaw and onion until evenly coated. Chill for at least 15 minutes to allow the flavors to combine. Toss before serving. Serves 4 – 6 people as a side.
Authors Note: I really enjoyed this with the broccoli slaw mix. But, if you have basic coleslaw mix on hand, that will work just fine.
