Citrus and Ginger Broccoli Slaw

I was killing time at the mall when I found myself in the cookbook section of a bookstore.  Brent has recently decided to go on a low calorie diet, which means I’m on one as well.  Oh the pressure.  I was desperately searching for inspiration as I thumbed through the wide assortment of magic potion books that claimed to add flavor to my diet.  There was no way I’m going to live off of rabbit food and healthy frozen meals just to lose weight.  I need some substance to my flavor.

I have a few rules about buying cookbooks.  They must have pictures, unpretentious recipes, and cute stories that inspire me to cook.  The Diabetes & Heart Healthy Meals for Two broke all the rules.  But I decided to give it a try and the first recipe was wonderful!  The citrus flavor with the crisp slaw was bold and refreshing.  The heavy mayo wasn’t missed at all.  I feel skinny already.

Citrus and Ginger Broccoli Slaw

Recipe Type: Salads
Serves: 4-6 people
Ingredients
  • ½ cup orange juice
  • 1 Tbl. orange zest
  • ¼ cup lemon juice
  • 3 tsp. sugar
  • 1 1/2 tsp. fresh ginger, grated
  • 12 oz. pack fresh broccoli slaw mix
  • ½ red onion, thinly sliced
Instructions
  1. Whisk together in a large mixing bowl the orange juice, orange zest, lemon juice, sugar and ginger. Toss in the broccoli slaw and onion until evenly coated. Chill for at least 15 minutes to allow the flavors to combine. Toss before serving.
Author's Note
I really enjoyed this with the broccoli slaw mix. But, if you have basic coleslaw mix on hand, that will work just fine. Adapted for a crowd from: Diabetes & Heart Healthy Meals for Two.

  1. I was just reading another delicious-sounding slaw recipe and now I see this! Is there such thing as too much slaw? Nope, I don’t think so. Especially since there’s soo much you can do with it!

  3. If a cookbook does not have at least 50% pictures, we’re over it. It’s just not fun to look at words without pictures of food. Whoever writes a cookbook should know that if it’s good enough to share a recipe, it’s good enough to show the picture. *sigh* ANYWAYS, this definitely has all the citrus flavor we love to add to dishes. Glad it was a successful recipe!

    It makes you feel like Summertime with no guilt after. DELICIOUS~

  5. Low-calorie diets can be a bad pain in the butt, but with the right spices and ingredients you can make miracles happen. That picture is delicious! Is Brent your partner? I wanna see pictures :)
