Rotisserie Chicken and Apple Salad Sandwich

Have you ever become fixated on an ingredient that you can’t get out of your head? I’ve recently become a fan of rotisserie chicken from the deli section of my local market. It’s so easy to buy on my way home from work and it’s pretty flavorful too.
So when Brent is off playing volleyball, and I’m not in the mood to cook, this chicken has been a perfect shortcut for my weekday meals. I usually take about a third of the chicken and eat it with some simple sautéed vegetables, or a nice salad. Then, the leftovers become a completely different item for next day’s lunch. My favorite has been this Rotisserie Chicken and Apple Salad Sandwich. The combination of sweet crispy apples and bright flavorful sauce is a satisfying mid-day break from the everyday grind of work.
Rotisserie Chicken and Apple Salad Sandwich
3 cups rotisserie chicken, deboned and chunked
1 Tbl. shallot, minced
1/3 cup celery, small diced
2/3 cup granny smith apple, small diced
1/3 cup mayo
1 tsp. dijon mustard
1 ½ tsp. cider vinegar
¼ cup honey cashews, small chopped
1/8 tsp. nutmeg
salt and pepper to tasteMix the mayo, dijon mustard, cider vinegar and nutmeg until well combined. Set aside. In a medium mixing bowl, toss together the chicken shallot, apple and cashews. Add the dressing and mix until well combined. Salt and pepper to taste. Serve with big slices of hearty bread and leaf lettuce.
Authors Note: The addition of the cider vinegar and nutmeg added a wonderful hint of brightness to the salad. It’s something you don’t really know is there, but all of the flavors seem to become elevated to a whole new level.

Those roti chickens are really adaptable. You can make great salads, taco, quesadillas, soups, etc. with them. A crunchy, sweet chicken salad is perfect.

I love it when I’m eating “content” for lunch, and don’t even know it. LoL
I simply thought I got a yummy sandwich to take to work cause I had been good.
Who knew it was leftovers! All I can say is, I loved my lunch.
