All I wanted to do this evening was hear the sizzle of a juicy steak on the grill, wrapped it in a tortilla, with a delicious pile of fresh guacamole. I planned to eat my meaty dinner flopped on the couch while watching a little mind numbing TV. Ahh…a perfect evening after a long day of work.
This recipe was very easy to make, and perfect for a weekday meal. The lime really helped to brighten the flavors, and the avocado had great texture with chunks scattered throughout. Feel free to adjust the ingredients to suit your tastes. That’s what makes it impromptu after all. Enjoy!
- 2 Haas Avocados
- ½ cup (1 med.) tomato, diced
- 1 Tbl. (1 med.) jalapeño, minced
- ¼ cup red onion, minced
- 2 Tbl. fresh lime juice
- 1 tsp. garlic, minced
- salt and pepper
- Slice the avocados in half, remove the pit and skins. Place in a medium mixing bowl. Roughly mash the avocados with the lime juice. Toss in the remaining ingredients until well combined. Salt and pepper to taste. Serves 4 as a side.
