Impromptu Guacamole

Impromptu Guacamole

All I wanted to do this evening was hear the sizzle of a juicy steak on the grill, wrapped it in a tortilla, with a delicious pile of fresh guacamole. I planned to eat my meaty dinner flopped on the couch while watching a little mind numbing TV. Ahh…a perfect evening after a long day of work.

This recipe was very easy to make, and perfect for a weekday meal. The lime really helped to brighten the flavors, and the avocado had great texture with chunks scattered throughout. Feel free to adjust the ingredients to suit your tastes. That’s what makes it impromptu after all. Enjoy!

Impromptu Guacamole
2 Haas Avocados
½ cup (1 med.) tomato, diced
1 Tbl. (1 med.) jalapeño, minced
¼ cup red onion, minced
2 Tbl. fresh lime juice
1 tsp. garlic, minced
salt and pepper

Slice the avocados in half, remove the pit and skins. Place in a medium mixing bowl. Roughly mash the avocados with the lime juice. Toss in the remaining ingredients until well combined. Salt and pepper to taste. Serves 4 as a side.

    If you like Guacamole, you’ll love Roquemole. You just take this recipe and add Roquefort cheese (or any type of Blue Cheese) and a handful of roughly chopped mild jalapeno peppers. Its A-MA-ZING!

    Guacamole is one of my favorite things in the world!! I could eat it for every meal, but that probably wouldn’t be the best idea…. Yours looks beautiful!

    That does sound like the perfect relaxing evening! Although after a long day for me (or any day for that matter), I need a lil (or a LOT depending on the day) bit of wine. :)

    Dumb story, but I’m sharing it anyway – lucky you ;-)
    I just bought avocados for $0.50 a piece – I should have known something was off, because they’re NEVER that cheap – but they felt fine. They were just a litlle past due – do you know that an over-ripe avocado tastes like mayo? I thought my spoon was dirty, but no – it was the avo – took me a few bites – duh!
