Chicken Salad Lunch

Promptly at 12:30 pm every day, I watch my coworker’s lumber up to the microwave to cook their frozen meals. As anyone with a food blog knows, I tend to have a lot of leftovers and those typically become my lunch. But there are times when leftovers are not an option and I also have to succumb to the modern conveniences of the freezer.
But there has got to be good lunch recipes out there that can be easily made the night before and won’t turn into a soggy mess. I’ve become obsessed with this concept with many failed experiments under my belt. However, out of pure luck, I felt this recipe made the grade.
Chicken Salad Lunch
3 (5 oz) chicken breasts, cooked
½ celery, small chopped
3 Tbl. red pepper, small chopped
1/3 – ½ cup mayo
1 tsp. yellow mustard
2 tsp. chives, minced
salt and pepper
2 cups fresh spinach
2 cups iceberg lettuce, choppedRoughly dice the cooked chicken into medium sized pieces. Add the chicken in a medium mixing bowl with the celery, red pepper, mayo, mustard and chives. Mix together until completely coated with the mayo. Season with salt and pepper.
Evenly distribute the spinach and iceberg lettuce in two plastic containers. Scoop the chicken salad in the center of each pile of lettuce. Garnish with a few strips of red pepper. Makes 2 hearty lunches.

This looks wonderful. I have been in such a lunch rut since fall. And I refuse to be that ‘microwaving frozen dinner’ colleague in the lunchroom.
I agree with frozen meals – I would say 90% of my office eats them on the daily basis – AND WE HAVE A FULL KITCHEN AT WORK! So while I am stir-frying up shrimp and veggies, they just look at me in shock and awe.
While I don’t like chicken salad – my husband loves it – thanks for the recipe Cory!
I had tuna salad for lunch, Chicken salad is just as good. I’m going to try mustard next time.

Lunch is one of those hard ones for people. Maybe that’s why frozen meals or take-out rule for the majority. If you have more quick lunch ideas, share share share!
