Fresh Mozzarella Class

I thought I was the only person on the planet crazy enough to wake up at the crack of dawn on a weekend just to learn how to make fresh mozzarella. Of course that was until I walked into the classroom to see 10 other crazies waiting patiently for the class to start.
My friend Diana and I share a common passion for cooking and both had a desire to learn the world of fresh mozzarella making. Sure we could have done a Google search for directions or watched the latest how-to video on YouTube. But there is nothing more fun than to be able to experience the process first hand with other foodies.
I was amazed to discover that making fresh mozzarella is actually extremely easy. From time-to-time, I would enthusiastically ask the teacher “is that really it?” Sure enough, that really was it. With the basic process mastered, we learned several techniques designed to infuse flavors into the cheese. My favorite was to flatten the cheese into a half sheet pan. Then layer fresh basil and chopped sundried tomatoes across the top. Roll the cheese and ingredients to create a spiral look when it’s sliced.
Thanks to this class, I can’t stop thinking about making cheese. The difference in flavor is so hard to describe that I can’t find the words to give it the justice it deserves. But take my word for it…homemade fresh mozzarella is pretty darn good!

I would have been sitting right next to you Cory – love it! I’ve made ricotta cheese before, but not mozzarella – now I have to make some!
