No Bake Cookies

My friend Jimmy is mildly allergic to the magical world of peanuts. One day he was pining for the rich taste of no bake cookies even though one bite would cause quite a bit of discomfort. Through a little trial and error, I discovered soy butter is a great alternative to peanut butter. The flavor is rich and still works well with the chocolate. I like to use a melon baller sized ice cream scoop to make mini cookies. They are the perfect bite sized dessert when I’m craving something sweet.
No Bake Cookies
2 cup sugar
4 Tbl. cocoa
½ cup butter
½ cup milk
¾ cup soy butter or peanut butter
1 Tbl. vanilla
3 cups quick cooking oatmealIn a nonstick saucepan bring to a boil, the sugar, cocoa, butter and milk. Let boil for exactly 1 minute. Remove from the heat and add peanut butter, vanilla and oatmeal. Stir until completely combined. Quickly drop mellon ball sized mixture on parchment paper and smooth out slightly. Allow to cool and harden before serving. Makes roughly 2-3 dozen cookies depending on size.

These look great. I’ve been curious about the no bake cookies, and now that you’ve posted a recipe, I think I will bookmark and finally whip up some no bake cookies!
I like the sound of no bake cookies. Keeping the oven off in the hot weather is always a plus.
I don’t make cookies very often, but these look amazing! Who knew you could make no-bake cookies!
No bake cookies are seriously a summer dream come true! And these look awesome!
