Caprese Skewers

The voices in my head debated long and hard about what to bring to a recent potluck gathering. A little birdie told me there would be the usual variety of dips, chips and sweets. Plus, there would be a few people who prefer the veggie side of life. I thought it would be nice to change things up a bit and bring something that would be lighter than the usual potluck fare.

This recipe might be a little out of season as other hearty flavors are currently dominating the food world right now. But the bold colors of the Italian flag were so tempting; I just couldn’t pass this one up. I would say finding myself leaving with an empty bamboo platter means they were a real crowd pleaser.

Caprese Skewers

Caprese Skewers
2 pints cherry tomatoes
1 – 1 ½ lbs fresh mozzarella, small balls
25 – 30 leaves fresh basil
3 inch wooden skewers
olive oil
salt and pepper
favorite dried herbs (I used dried Italian seasoning)

Skewer two cherry tomatoes, one mozzarella ball and fresh basil leaves in an alternating pattern. Repeat until the tomatoes and mozzarella are gone. Drizzle with olive oil. Sprinkle with salt, pepper and your favorite herbs. Makes roughly 35 – 40 skewers.

  1. These look so amazing. The vivid colors in your pic… ahhh, I’m craving these just looking at it. I suppose it doesn’t hurt that basil + mozzarella + tomatoes are one of my very favorite flavor combos. :P Thanks for sharing!

    I just love these. It’s my twins’ second birthday party this weekend and I’m making these as one of the snacks for the adults. Just wish bocconcini wasn’t so expensive in South Africa, I’ll just be using regular mozzarella. :)
